Instructions

  • Put approximately 1/4 inch of oil in your skillet and heat oil to medium low (350oF)

  • Use a mandolin to slice even thin slices
  • Put banana slices in skillet once oil is hot enough to fry (don’t overcrowd, you may need to fry in batches if you’re making plenty)
  • Move around periodically to ensure even heating and avoid burning your fries
  • Your chips are ready once the middle and edges begin to brown
  • Remove from skillet with a slotted spoon, and put on a paper towel to absorb excess grease.
  • Toss with a little sea salt and mix to distribute evenly.
  • Enjoy!

Notes

Peeling green bananas: It is helpful to cut off each end of the banana, then score the skin length-wise. Basically you want to cut through all the skin on at least once side but try not to damage the white flesh of the banana itself. It should be easy to peel off the skin afterwards. You can oil your hands to prevent too much sap from the bananas sticking to them. It can stain, so try to avoid getting it on your clothes.
